Available in various types, shapes and sizes, these edible fungi (purely vegetarian!) are a great way to glam-up your dishes. Talking about the types, there are – button, enoki, morel, oyster, shiitake, porcini, chanterelle and portabella. Buy the ones with a firm texture and even colour with tightly-closed caps. If the gills are showing, it is an indication of age and they are probably past their prime.

Ingredients for Pista Mushroom Recipe

  • Mushrooms sliced 400 grams

  • Pistachios 3 tablespoons

  • Ginger 1 inch piece

  • Garlic 5 cloves

  • Onion cut into four pieces 2 medium

  • Milk 1/2 cup

  • Pistachios blanched 1/4 cup

  • Sugar 1 teaspoon

  • Coriander powder 2 teaspoons

  • White pepper powder 1/2 teaspoon

  • Salt to taste

Method

Step 1

Combine together oil, mushrooms, ginger, garlic and grill in the microwave for four minutes. Add onions and microwave on HIGH for six minutes.

Step 2

Remove and grind it to a paste. Combine together milk, sugar and mushroom paste in a microwave bowl and microwave for two minutes. Add coriander powder, white pepper powder ans salt ang microwave on HIGH for two minutes.

Step 3

Serve hot.
