Ingredients list for Pizza Panne

  • 450 gms + Refined flour
  • 5 grams Black olives
  • 1½ teaspoons sugar
  • ½ tsp + to salt
  • 5½ tablespoons olive oil
  • 1 fresh oregano sprig
  • 1 pinch crushed peppercorns
  • 1 large pinch chopped garlic
  • 6-7 black olives pitted and chopped
  • 6-7 green olives pitted and chopped
  • 1 pinch sea salt

Method

  1. Preheat oven at 180°C. Place a silicon sheet on a baking tray.
  2. Dissolve yeast and 1½ tsps sugar in ¼ cup lukewarm water.
  3. Combine ½ tsp salt and refined flour in a dough maker. Add dissolved yeast mixture and knead into a soft dough using 3½ tbsps olive oil and sufficient water. Remove the dough from the maker and set aside for 15-20 minutes.
  4. Dust the worktop with little flour and spread the dough with your fingers. Roll out into a large thin disc dusting with flour.
  5. Spread remaining olive oil on it. Add torn fresh oregano, crushed peppercorns, chopped garlic on top and rub them well. Add black and green olives and sea salt on top.
  6. Cut the disc into long triangles and place them on the baking tray. Put tray in preheated oven and bake for 8-10 minutes.
  7. Remove from heat and serve immediately with tomato basil sauce.
