Prawns with Chilli Ginger

Ingredients list for Prawns with Chilli Ginger

  • 20-24 Prawns (kolambi/jhinga) shelled and deveined
  • 2 Birds eye chillies chopped
  • 1 inch Ginger finely chopped
  • to taste Salt
  • to taste Crushed black peppercorns
  • 1 tablespoon Oil
  • 3-4 Garlic cloves chopped
  • 4 Shallots finely chopped
  • 2 Lemon grass stalk finely chopped
  • 1 cup Vegetable stock
  • 1 tablespoon Fresh coriander leaves chopped

Method

  1. Put prawns in a bowl. Add salt and crushed peppercorns, mix well and set aside for ten to fifteen minutes.
  2. Heat oil in a non-stick pan. Add garlic, ginger and shallots, mix and sauté for a minute.
  3. Add chillies and lemongrass, mix and sauté for a minute.
  4. Add stock, stir and bring to a boil. Add prawns and bring to a boil. Adjust seasoning.
  5. Add coriander leaves and mix well.
  6. Serve hot.
