Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Pudla Sandwich Recipe

  • Gram flour (besan) 1 cup

  • White bread 8 slices

  • Turmeric powder 1/4 teaspoon

  • Red chilli powder 1/2 teaspoon

  • Salt to taste

  • Green chillies , cinely chopped 1/2 teaspoon

  • Fresh coriander leaves , chopped as required

  • Tomatoes , finely chopped 4 tablespoons

  • Mixed capsicujms , cut into thin strips 4 tablespoons

  • Chaat masala as required

  • Purple cabbage , finely shredded 4 tablespoons

  • Cabbaage , finely shredded 4 tablespoons

  • Butter as required

  • Processed cheese , grated 4 tbsps + to garnish

  • Tomato ketchup to serve

  • Green chutney to serve

Method

Step 1

To make pudla batter, take gram flour in a mixing bowl, add turmeric powder, red chilli powder, salt, green chillies, 1½ teaspoons coriander leaves and ¼ cup water and whisk well to make a smooth batter.

Step 2

Heat a non-stick pan. Take 2 bread slices, dip in the batter till well coated and place on the pan. Sprinkle 1 tablespoon tomatoes, 1 tablespoon mixed capsicums, ¼ teaspoon chaat masala, 1 tablespoon purple cabbage and 1 tablespoon cabbage and press lightly. Drizzle butter along the edges. Flip the slices when the underside turns golden brown. Drizzle some more butter along the edges and flip once more.

Step 3

Sprinkle some coriander leaves, 1 tablespoon processed cheese and some chaat masala. Cut the bread slices from the centre and place one bread slice over the other with the topping side facing each other. Remove from heat and cut into four triangles. Make more sandwiches in the same way.

Step 4

Arrange them on individual serving plates, garnish with processed cheese and serve hot with tomato ketchup and green chutney.
