How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Puffed Rice and Amaranth Laddoos Recipe

  • Puffed rice (kurmura/murmura) 1 1/2 cups

  • Puffed amaranth seeds (rajgira) 1 1/2 cups

  • Ghee 1 tablespo for greasing

  • Jaggery chopped 1 1/2 cups

Method

Step 1

Dry roast puffed rice in a non-stick pan for 2-3 minutes and transfer into a bowl.

Step 2

Dry roast amaranth seeds in the same pan for 2-3 minutes and transfer into another bowl.

Step 3

Heat ghee in the same pan, add jaggery and ½ cup water, mix and cook till the mixture reaches soft ball consistency.

Step 4

Add roasted puffed rice and amaranth and mix well. Transfer the mixture into a greased bowl and set aside to cool.

Step 5

Grease your palms with some ghee, divide the mixture into equal portions and shape them into laddoos. Serve or store in an airtight container.
