By Sanjeev Kapoor 07 Mar 2019 in Recipes Course New Update Main Ingredients Milk, Sugar Cuisine Uttar Pradesh Course Desserts Prep Time 6-10 minutes Cook time 51-60 minutes Serve 4 Taste Sweet Level of Cooking Moderate Others Veg Ingredients list for Rabri 4 cups Milk 2 tablespoons Sugar 1 teaspoon Rose water 1 teaspoon Green cardamom powder a few Almonds a few Pistachios Method Blanch the almonds and pistachios, peel and slice them thinly. Bring the milk to the boil then cook slowly on low heat for at least 30-40 minutes. Stir frequently and let the cream thicken at the edge of the pan. Add the sugar and stir until the milk is less than quarter the original amount. Scrape the cream formed on the sides back into the milk. When ready, stir in the rose water and pour into a glass dish. Garnish with sliced almonds, pistachios and cardamom powder. Rabri may be served either hot or chilled.
