Ingredients list for Rainbow Rice
- 3 cups Basmati rice
- 2 tablespoons Carrot
- 1/2 cup Corn kernels
- 1 Red capsicum finely chopped
- 1 small Green capsicum finely chopped
- 1/2 medium Carrot grated
- 1/2 cup Green peas
- to taste Salt
- 1 tablespoon Lemon juice
- 2 tablespoons coriander leaves chopped
Method
- Heat oil in a non stick pan.
- Add corn, green capsicum, red capsicum, carrot, green peas and sauté for four to five minutes.
- Add rice, salt and toss well. Cook for four to five minutes.
- Serve hot garnished with coriander leaves.
