Ingredients list for Rainbow Rice

  • 3 cups Basmati rice
  • 2 tablespoons Carrot
  • 1/2 cup Corn kernels
  • 1 Red capsicum finely chopped
  • 1 small Green capsicum finely chopped
  • 1/2 medium Carrot grated
  • 1/2 cup Green peas
  • to taste Salt
  • 1 tablespoon Lemon juice
  • 2 tablespoons coriander leaves chopped

Method

  1. Heat oil in a non stick pan.
  2. Add corn, green capsicum, red capsicum, carrot, green peas and sauté for four to five minutes.
  3. Add rice, salt and toss well. Cook for four to five minutes.
  4. Serve hot garnished with coriander leaves.
