Ingredients list for Roasted Cherry Tomato and Guacamole Sandwich

  • 10-12 Cherry tomatoes
  • 1 Avocado seeded, flesh scooped out and mashed
  • 4 Bread slices Rye
  • to sprinkle Oil
  • to sprinkle Crushed black peppercorns
  • to taste Salt
  • 1-2 Fresh rosemary sprigs
  • 1 tablespoon Tomato finely chopped
  • 1 tablespoon Onion finely chopped
  • 1-2 Green chillies finely chopped
  • 1 tablespoon Fresh coriander leaves chopped
  • Juice of ½ lemon
  • for spread Feta cheese creamed
  • as required Alfalfa

Method

  1. Preheat oven to200º C. Line a baking tray with a silicon mat.
  2. Halve cherry tomatoes and spread them in the baking tray. Drizzle some oil and sprinkle some crushed peppercorns and salt on top. Put some torn rosemary sprigs.
  3. Place the baking tray in preheated oven and roast for 10 minutes.
  4. To prepare guacamole, take avocado flesh in a bowl. Add tomato, onion, green chillies, coriander leaves, lemon juice, salt and crushed peppercorns and mix well.
  5. Spread some feta cheese and guacamole on each bread slice. Put some roasted cherry tomatoes on top.
  6. Serve immediately.
