History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.

Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Rose Lassi Recipe

  • Yogurt 4 cups

  • Rose water 3 tablespoons

  • Dried rose petalsq crushed 3 tablespo to garnish

  • Rose syrup as required

  • Green cardamom powder 1 teaspoon

  • Castor sugar 1 cup

  • Fresh malai 3 tablespoons

  • Pistachios blanched, peeled and chopped as required

  • Almonds chopped as required


Step 1

Take yogurt in a bowl and whisk till smooth. Add cardamom powder, 1 tablespoon rose water and ½ tablespoon crushed dried rose petals and whisk well.

Step 2

Add castor sugar and whisk till the sugar dissolves completely. Add malai and whisk till smooth.

Step 3

Spread some pistachios and almonds on a plate and mix them well.

Step 4

Take rose syrup in a bowl, dip the rims of tall serving glasses in the syrup and coat them with pistachio-almond mixture.

Step 5

Pour lassi into the glasses, sprinkle some crushed dried rose petals on top and serve immediately.
