Favourite seafood? Prawns, prawns and more of prawns. A wide variety of small crustaceans, tiny relatives of the lobster, are known as prawns. Prawns are normally translucent when raw but get their distinctive pink or red colour on being cooked. one word of caution – if buying unpeeled prawns, smell for freshness and look for bright, shiny shells that have some spring left in them.

Ingredients for Salt And Pepper Prawns Recipe

  • Jumbo Prawns 450 grams

  • Black Pepper crushed to taste

  • Black pepper powder 1 teaspoon

  • Black peppercorns crushed 10

  • Cornflour/ corn starch 3 tablespoons

  • Soy sauce 3 tablespoons

  • Oil 2 tbsps + to deep fry

  • Garlic crushed 5 cloves

  • Ginger chopped 1 inch piece

  • Spring onions sliced 2

  • MSG 1/4 teaspoon

  • Spring onion greens sliced 4 stalks

Method

Step 1

Shell prawns but keep the tail intact, devein and wash thoroughly. In a bowl mix salt, half teaspoon black pepper powder, half of the crushed black peppercorns, two tablespoons of cornflour, one tablespoon of soy sauce.

Step 2

Add the prawns, mix well and marinate for fifteen minutes. Dissolve one tablespoon cornflour in three tablespoons of water. Heat sufficient oil in a wok and deep fry the prawns for two minutes and drain on absorbent paper.

Step 3

In a pan heat two tablespoons of oil. Add garlic, ginger, spring onions and sauté for two minutes on high heat. Add the prawns, salt, remaining black pepper powder, half of the remaining crushed black peppercorns, soy sauce, MSG, dissolved cornflour and spring onion greens.

Step 4

Mix well. Stir fry on high heat for four minutes or until the prawns are cooked through. Before serving sprinkle the remaining crushed black peppercorns.
