Middle Eastern cuisine comprises of food eaten by the people of the various countries of the Middle East. The cuisine of the region is diverse while having a degree of homogeneity.  Some commonly used ingredients include olives and olive oil, pitas, honey, sesame seeds, dates, sumac, chickpeas, mint and parsley.

Ingredients for Sambousek Recipe

  • Readymade whole wheat flour (atta) dough 250 grams

  • Carom seeds (ajwain) 1 teaspoon

  • Ginger , finely chopped 1 tablespoon

  • Cottage cheese (chenna) , grated 1 cup

  • Onion , finely chopped 1 medium

  • Black salt 1/2 teaspoon

  • Dried mango powder (amchur) 1 1/2 teaspoons

  • Garam masala powder 1 teaspoon

  • Turmeric powder 1/4 teaspoon

  • Fresh spinach bunch , shredded 1 medium

  • Salt to taste

  • Rice bran oil to deep fry

Method

Step 1

Take carom seeds, ginger, cottage cheese, onion, black salt, dried mango powder, garam masala powder, turmeric powder and spinach in a bowl and mix well. Add salt and mix well.

Step 2

Divide the dough into equal portions and roll each portion into a disc. Spread a spoonful of cottage cheese-spinach mixture on each disc and roll into a cylinder. Roll into a spiral, dust some flour and roll out into medium size discs.

Step 3

Heat a non-stick tawa. Place the discs on it, one at a time, and cook, basting with rice bran oil and turning sides, till evenly browned on both sides.

Step 4

Cut each disc into 4 pieces, arrange them on a serving platter and serve with your choice of pickle.
