Ingredients list for Sarson wale Baingan

  • 2 Brinjal, thickly sliced
  • 2 teaspoon Mustard seeds
  • 2 tablespoons Oil
  • 4 cloves Garlic
  • 2 Green chillies
  • to taste Salt
  • 1 teaspoon Turmeric powder
  • 1/2 teaspoon Red chilli powder
  • for garnish coriander leaves, chopped

Method

  1. Heat one tablespoon in anon-stick pan. Add brinjals and saute till brown.
  2. Remove from heat and set aside.Grind garlic and green chillies into a paste using very little water.
  3. Heat the remaining oil in a non-stick pan.
  4. Add garlic-chilli paste, salt, turmeric powder and red chilli powder.
  5. Mix well and saute for two minutes.
  6. Add brinjals and mix well. Cook on low heat for two minutes.
  7. Garnish with coriander leaves and serve hot with rotis.
