Seafood Satay

Seafood marinated in Thai red curry paste and some other ingredients, skewed onto satay sticks and cooked in a pan. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Seafood Satay

  • 250 grams Boneless fish cut into cubes
  • 6-8 Prawns (medium) deveined
  • 1 tablespoon Thai red curry paste
  • 5-6 Fresh basil leaves
  • 1-2 Fresh red chillies
  • 1 tablespoon Lemon juice
  • 2 tablespoons Oil
  • 1 tablespoon brown sugar/jaggery
  • to taste Salt
  • for sprink Fresh coconut scraped
  • 1/2 medium Carrot cut into juliennes
  • 1/4 cup Green capsicum curls

Method

  1. Combine Thai red curry paste, shredded basil, finely chopped red chillies, lemon juice, 1 tablespoon oil, brown sugar and salt into a bowl and mix well. Add fish cubes and prawns and mix well. Set aside to marinate for 30 minutes.
  2. Insert fish and prawns in satay sticks and repeat the procedure till all the ingredients are used.
  3. Heat remaining oil in a non-stick pan.
  4. Sprinkle coconut over the prepared satays and cook in hot oil till evenly done.
  5. Place carrot and bell pepper in the centre of serving plate. Place prepared satays on the sides and serve hot.
