Shrimp, Leek and Spinach Pasta

Pasta cooked with shrimps, leeks, baby spinach and lightly flavoured with lemon rind and cheese. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Shrimp, Leek and Spinach Pasta

  • 2 cups Penne pasta
  • 200 grams Shrimps medium, peeled and deveined
  • 2 Leeks halved and diagonally cut
  • 200 grams Fresh baby spinach
  • to taste Salt
  • 2 tablespoons Butter
  • to taste Black pepper powder
  • Rind of 1 lemon grated
  • 3/4 cup Cheese sauce
  • a pinch Red chilli flakes

Method

  1. Boil five cups water in a deep non-stick pan, add salt and pasta and cook till the pasta is done. Drain.
  2. Heat butter in a non-stick pan, add leeks, salt and pepper powder and cook, stirring occasionally, till the leeks are soft.
  3. Add shrimps and lemon rind and cook, tossing frequently, for four to five minutes.
  4. Add cheese sauce, boiled pasta and spinach and mix well.
  5. Add salt, pepper powder and chilli flakes and toss. Simmer for a minute.
  6. Transfer onto a serving plate and serve hot.
