History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Smoked Chaas Recipe

  • Yogurt 2 cups

  • Fresh mint leaves chopped 1 tablespoon

  • Fresh coriander leaves chopped 1 tablespo for garnishing

  • Salt to taste

  • Ginger finely chopped 1 teaspoon

  • Curry leaves 7-8

  • Green chillies finely chopped 1-2

  • Cumin seeds 1 teaspoon

  • Oil 1 tablespoon

Method

Step 1

Grind together 1 cup yogurt, mint leaves, coriander leaves, salt and ginger to a smooth mixture.

Step 2

Add 2 cup water and mix well.

Step 3

Place hot coal in a small steel bowl and place it into a large bowl. Pour the buttermilk mixture into the large bowl. Place curry leaves, green chillies and cumin seeds over the coal and pour oil over them. Cover the large bowl with an aluminium foil and keep for 5 minutes.

Step 4

Remove the foil, pour the chaas into serving glasses, and serve garnished with coriander leaves.
