Available in various types, shapes and sizes, these edible fungi (purely vegetarian!) are a great way to glam-up your dishes. Talking about the types, there are – button, enoki, morel, oyster, shiitake, porcini, chanterelle and portabella. Buy the ones with a firm texture and even colour with tightly-closed caps. If the gills are showing, it is an indication of age and they are probably past their prime.

Ingredients for South Indian Mushroom Masala Recipe

  • Button mushrooms quartered 10-12

  • Oil 1 1/2 tablespoons

  • Mustard seeds 1 teaspoon

  • Split skinless black grams (dhuli urad dal) 1/2 teaspoon

  • Curry leaves 4-5

  • Ginger-garlic paste 1/2 teaspoon

  • Medium onions chopped 2

  • Cashewnuts 12-15

  • Medium tomato chopped 1

  • Tomato puree 1 cup

  • Sambhar powder 1 tablespoon

  • Turmeric powder 1/2 teaspoon

  • Salt to taste

  • Fresh coriander leaves chopped 1 tablespoon

  • Fresh cream 1 tablespoon

  • Fresh coriander sprig to garnish


Step 1

Heat oil in a non-stick pan, add mustard seeds and let them splutter. Add split black gram, curry leaves and ginger-garlic paste, mix and sauté till raw smells disappear.

Step 2

Add onions, mix and sauté till golden brown. Add cashewnuts and mix well. Add tomato, mix well and cook till tomato turns pulpy.

Step 3

Add tomato puree, mix well and saute for 1 minute. Add sambhar masala powder and turmeric powder and mix well.

Step 4

Add mushrooms and mix well. Add salt, mix well, cover and cook for 4-5 minutes or till the mushrooms are cooked completely.

Step 5

Add coriander leaves and fresh cream and mix well.

Step 6

Transfer to a serving bowl, garnish with coriander sprig and serve hot.
