With the recognition of being an important commercial pulse of the world, soya beans are coming into many kitchens around the world. Soya beans are said to control blood sugar levels, lower cholesterol, regulate the bowels and relieve constipation. Besides the popular tofu or beancurd, the beans are also fermented and used to make flavouring pastes and condiments, notably the Japanese soy sauce or shoyu and miso and the Indonesian tempeh.

Ingredients for Soyabean Pie Recipe

  • Soyabean granules soaked 1 cup

  • Refined flour 2 Cups + f

  • Salt 1 tsp + to

  • butter For greasing and brushing 1 cup +

  • Oil 1 tablespoon

  • cumin seeds 1 teaspoon

  • green chillies finely chopped 2

  • garlic finely chopped 1 tablespoon

  • medium onion finely chopped 1

  • turmeric powder ¼ teaspoon

  • red chilli powder 1 teaspoon

  • coriander powder 2 teaspoons

  • medium tomatoes chopped 2

  • fresh mint leaves finely chopped ½ cup

  • fresh coriander leaves finely chopped ½ cup

  • ginger finely chopped 1½ teaspoons

  • Fresh coriander sprigs for garnis

Method

Step 1

Preheat oven at 180°C. Place a silicon sheet on a baking tray.

Step 2

Combine refined flour, salt and butter in a bowl. Mix well and rub them to resemble bread crumbs. Add ¼ cup chilled water slowly and knead well into a stiff dough. Set aside.

Step 3

Heat oil in a non-stick pan. Add cumin seeds, green chillies, garlic and sauté till the garlic turns golden.

Step 4

Add onion and sauté well.

Step 5

Dust dough with little flour and roll out into a large thin sheet. Take a cookie cutter, a size larger than a 4 inch steel katori and cut out 4 discs from the dough sheet.

Step 6

Add turmeric powder in the pan and mix well. Add red chilli powder, coriander powder, salt and mix well.

Step 7

Add tomatoes, toss and cook till the oil leaves the sides of the pan.

Step 8

Roll out the leftover dough again into a large sheet and using the 4 inch katori, cut out 4 more discs from it.

Step 9

Grease four 4 inch katoris with little butter and dust with little flour. Line the katoris with the second batch of discs pressing well. Prick the inside with a fork.

Step 10

Add soyabean granules and ¼ cup water in the pan. Mix well and cook further.

Step 11

Add chopped mint, chopped coriander and ginger and mix well. Cook till fully done.

Step 12

Roll out leftover dough into a sheet and cut thin strips from it.

Step 13

Fill the lined katoris with the cooked soyabean mixture and cover with the first batch of dough discs pressing at the edges to seal. Apply little water on top and place the dough strips on top to make a mat design.

Step 14

Brush little butter on top of the pies and place the katoris on the baking tray and put the tray in the preheated oven. Bake for 16-18 minutes or till the crust turns golden.
