Spiced Flapjacks

A sweet baked tray loaded with oats and pistachios and sweetness of golden syrup and brown sugar. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Spiced Flapjacks

  • 100 millilitres Golden syrup
  • 225 grams Oats
  • 9 Green cardamoms
  • 1 tablespoon Caraway seeds (shahi jeera)
  • 150 grams brown sugar/jaggery
  • for greasing Unsalted butter ¾ cup + 1 +
  • 120 grams chestnuts roughly chopped
  • 75 grams Pistachios roughly chopped
  • Zest of 1½ oranges

Method

  1. Preheat the oven to 180º C. Grease a 25cm X 30cm baking tin with some butter.
  2. Remove the seeds from the cardamoms and place in a mortar along with the caraway seeds and grind with the pestle into a fine powder.
  3. Heat together the golden syrup, brown sugar and butter in a non-stick pan. Stir well till the butter melts and the sugar dissolves.
  4. Combine the chestnuts, pistachios, orange zest and oats in another bowl and mix. Add the golden syrup mixture and mix till well combined.
  5. Pour the mixture into the prepared tin and level it out. Place the tin in the preheated oven and bake for twenty-five to thirty minutes. Remove from oven and cool.
  6. Cut into squares and serve.
