Ingredients list for Spicy Corn Cups

  • 3/4 cup Corn kernels boiled
  • 1/2 cup Potato boiled and peeled
  • 1 teaspoon Oil
  • 1/2 medium Green capsicum
  • 1/2 medium Red capsicum
  • 1 medium Onion finely chopped
  • 1 teaspoon Chaat masala
  • 1 1/2 tablespoons Butter
  • 2-3 Green chillies finely chopped
  • to taste Salt
  • 2 tablespoons Fresh cream

Method

  1. Preheat oven at 200ºC.
  2. Heat oil in a non-stick pan. Finely chop green and red capsicums.
  3. Add onion to the pan and sauté for 1 minute. Add green chillies, capsicums, corn kernels and chaat masala. Mix and cook for 1 minute.
  4. Add ½ tbsp butter, mix well and cook for 1 minute.
  5. Divide the cooked corn mixture equally into 4 individual ramekin moulds.
  6. Put potatoes in a bowl, add salt and cream and mix well. Add remaining butter and mix well.
  7. Put the potato mixture equally over the corn mixture in each mould. Level the top, place the moulds in the preheated oven and bake for 15 minutes.
  8. Serve hot.
