The cuisine has its roots in a waterborne lifestyle, with aquatic animals, plants and herbs as major ingredients.
Thai cuisine is inextricably interwoven with culture, a mystical mix of fragrant flavours and intriguing history:  given the country’s historical Indian roots - Hindu Buddhism was bought here centuries ago, so many Thai curries are redolent with chillies, garlic, cardamom, cloves, cinnamon, and onions.

Ingredients for Spicy Noodles With Ginger And Vegetables Recipe

  • Noodles 100 grams

  • Carrots peeled 2

  • Zucchini 1 large

  • Spring onions 3

  • Oil 1 tablespoon

  • Ginger juliennes 4 tablespoons

  • Garlic chopped 3 teaspoons

  • Sesame oil (til oil) 1 teaspoon

  • Fish sauce 2 teaspoons

  • Water 1 1/4 cups

  • Coconut milk 1 cup

  • Soy sauce 1 tablespoon

  • Thai red curry paste 1 1/2 teaspoons

  • Peanuts, roasted and finely chopped 1/2 cup

  • Mint leaves finely chopped 2 tablespoons

  • Lemon juice 2 tablespoons

  • Salt to taste

Method

Step 1

Boil noodles, drain and keep aside. Cut carrots, zucchini and spring onions into matchstick-size strips.

Step 2

Heat vegetable oil in large skillet over high heat.

Step 3

Add 2 tablespoons ginger and garlic; sauté until fragrant.

Step 4

Add spring onions, carrot and zucchini. Stir fry. Add fish sauce and take off the heat.

Step 5

Heat sesame oil in a pan, add the remaining ginger, soy a sauce, fish sauce, red curry paste and some water.

Step 6

Stir to mix well. Add mint leaves, coconut milk, some of the roasted peanuts and lemon juice .

Step 7

In another pan, heat chilli oil. Add the boiled noodles and salt, stir and take off the heat.

Step 8

Transfer the noodles into the serving dish, pour the sauce followed by vegetables .

Step 9

Garnish with crushed peanuts and mint leaves
