Ingredients list for Spicy hot chicken soup

  • 2 Fresh red chillies
  • 2 Boneless chicken
  • 4 cups Chicken stock
  • 1 tin Creamed sweet corn
  • 2 tablespoon Extra virgin olive oil
  • 2 medium Onions finely chopped
  • 8-10 cloves Garlic
  • to taste Salt
  • 2 medium Potatoes boiled, peeled and cut into cubes
  • 1 stalk Spring onion greens
  • 1 tablespoon Cream

Method

  1. Heat chicken stock in a deep non stick pan, add cream style sweet corn and mix well.
  2. Heat extra virgin olive oil in another non stick pan, add onions and sauté.
  3. Add garlic and sauté. Add chicken and sauté for 2-3 minutes. Add salt to both chicken and sweet corn mixture and mix.
  4. Continue to sauté chicken, add potatoes and mix and cook till the chicken is done.
  5. Add fresh red chillies and mix. Roughly chop spring onion greens.
    Add cream to the chicken and mix well.
  6. Transfer into a serving bowl.
    Pour the corn soup over, garnish with spring onion greens and serve piping hot.
