In ancient times in the more affluent homes, feasts often started at mid-day and ended when the sun set! Maharashtrian cuisine covers a wide range from being extremely mild to very spicy dishes. Wheat, rice, jowar, vegetables, lentils and fruit form important components of Maharashtrian diet.

Ingredients for Suji Halwa Pre Mix - SK Khazana Recipe

  • Semolina 1 1/2 cups

  • Ghee 3 tablespoons

  • Milk powder 3/4 cup

  • Powdered sugar 1 1/2 cups

  • Mixed nuts powder 6 tablespoons

  • Green cardamom powder 3/4 teaspoon

  • A large pinch of saffron

  • Slivered pistachios for garnish

Method

Step 1

Heat a non-stick pan, add semolina and dry roast it till golden brown. Add ghee, mix and sauté for 2 minutes. Transfer onto a plate and spread it to cool down to room temperature.

Step 2

When cooled, transfer the semolina into a large bowl, add milk powder, powdered sugar, mixed nuts powder, green cardamom powder and saffron and mix till well combined.

Step 3

Transfer the mixture into an air tight container and store up to 6-8 days.

Step 4

To make instant suji halwa, take ½ cup of the pre-mix in an air tight microwave safe container and add 1 cup boiling water and mix well. Cover and set aside for 5 minutes. Keep it in the microwave and cook on high for 2 minutes. .

Step 5

Pack the suji halwa tightly into a katori, upturn the katori on a serving plate and gently lift the katori. Garnish with slivered pistachios and serve hot.
