Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Tariwala Chicken Recipe

  • Chicken drumsticks and thighs cut into half 750 grams

  • Oil 2 tablespoons

  • Bay leaf 1

  • Green cardamoms 2-3

  • Black cardamom 1

  • Cinnamon 1 inch

  • Cumin seeds 1 teaspoon

  • Large onion finely chopped 1

  • Ginger-garlic paste 2 tablespoons

  • Tata Sampann Red Chilli Powder 1 1/2 teaspoons

  • Turmeric powder 1/2 teaspoon

  • Cumin powder 1 teaspoon

  • Coriander powder 1 teaspoon

  • Fresh coriander leaves chopped 1 tablespoon

  • Salt to taste

  • Green chillies chopped 1-2

  • Medium tomatoes pureed 3 medium

  • Green cardamom powder 1/4 teaspoon

  • Fried onions for garnish

  • Steamed rice to serve

Method

Step 1

Heat oil in a non-stick wok, add bay leaf, green cardamoms, black cardamom, cinnamon and cumin seeds and sauté till cumin changes colour and the mixture becomes fragrant. Add onion, mix and sauté till golden.

Step 2

Meanwhile, take chicken in a bowl, add 1 tbsp ginger-garlic paste, turmeric powder, red chilli powder, cumin powder, coriander powder, coriander powder and salt and mix well.

Step 3

Add remaining ginger-garlic paste and green chillies to the onion mixture, mix well and saute till the raw smell of the garlic disappears.

Step 4

Add tomato puree and mix well. Cover and cook, stirring occasionally, till oil separates.

Step 5

Add chicken, mix well and saute on high heat. Add green cardamom powder, mix well and sauté on high heat for 3-4 minutes.

Step 6

Add 2 cups hot water and mix well. Cover and cook till the chicken is cooked completely. Take the pan off the heat.

Step 7

Transfer into a serving bowl, garnish with fried onions and coriander leaves and serve hot with steamed rice or parantha or pav.
