Gujarat has long stretches of unspoilt coastline and an endless supply of fish and shell fish. But strict Jainism in the past and orthodox Hinduism today has encouraged widespread vegetarianism.  The Gujarati cuisine is not heavily spiced but slightly sweeter than the cuisines of the neighbouring states.
Gujarati food is distinctively vegetarian with about 65% of its population shunning the meat.  The remaining 35% of the state’s population consists of Bohra Muslims and Parsis. Bohra Muslims are the followers of Abdullah who were Hindus who adopted Muslim religion.  The Parsi cuisine on the other hand is a blend of western influences.

Ingredients for Tel Poli Recipe

  • Refined Flour 2 cups

  • Semolina 1 cup

  • Oil 2 tablespoons

  • Stuffing

  • Raisins 2 teaspoons

  • Split Bengal gram (chana dal) 3 cups

  • Powdered sugar 2 cups

  • Green cardamom powder 1/2 teaspoon

  • Oil 1/2 cup

  • Ghee 4 tablespoons

Method

Step 1

Sieve maida, add rawa, oil and sufficient water and knead into a soft smooth dough. Cover with a damp cloth, keep it aside. Wash raisins and pat them dry.

Step 2

Boil chana dal in six cups of water. When it is almost cooked, add the powdered sugar and green cardamom powder. Blend the mixture into a smooth paste in the mixer. Add raisins and mix it well.

Step 3

Divide into twelve equal portions. Make twelve equal sized balls of the dough. Stuff each dough ball with one portion of the stuffing.

Step 4

Take a plastic sheet, apply oil over the sheet. Roll out the stuffed balls into very thin roundels.

Step 5

Heat a tawa and cook the polis on medium heat applying a little oil, till light golden on both sides.

Step 6

Store when completely cooled. This poli can be stored for long durations.
