How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Tomato Rice with Herb and Cheese Recipe

  • Cooked Rice 3 cups

  • Tomatoes finely chopped 3 medium

  • Fresh mixed herbs (rosemary, oregano, basil, thyme) 2 tablespoons

  • Grated processed cheese 1/2 cup + for garnishing

  • Butter 2 tablespoons

  • Minced garlic 2 tablespoons

  • Onion finely chopped 1 medium

  • Paprika powder 1 teaspoon

  • Salt to taste

  • Fresh parsley Chopped, 1 tablespoon + for garnishing


Step 1

Heat butter in a non-stick wok, add garlic and onion and sauté till onion turns translucent.

Step 2

Add tomatoes and stir on high heat for a minute. Add paprika powder and salt and mix well. Add rice and mix well.

Step 3

Add mixed herbs and parsley, mix well and cook on low heat for a minute.

Step 4

Add cheese, cover and cook on low heat for a minute.

Step 5

Transfer into a serving bowl and serve hot garnished with a little parsley and cheese.
