Ingredients list for Tomato and Basil Sandwich with Mascarpone Spread
- 2 medium Tomatoes sliced
- 5-6 Fresh basil leaves shredded
- 8 Brown bread slices
- 1 cup Mascarpone cheese
- to taste Crushed black peppercorns
- ½ teaspoon Red chilli flakes
- ½ teaspoon Fresh parsley chopped
- to taste Salt
- ½ teaspoon Fresh oregano chopped
- ½ teaspoon Fresh rosemary chopped
- 1 tablespoon Extra virgin olive oil
Method
- Take mascarpone cheese in a bowl. Add crushed peppercorns, chilli flakes, parsley, salt, oregano and rosemary and mix well.
- Take tomato slices in another bowl. Add basil, olive oil, crushed peppercorns and salt and mix well.
- Spread some cheese mixture over4 bread slices. Top each slice with 5-6 tomato slices and cover with remaining 4 bread slices.
- Trim edges, cut into triangles and serve immediately.
