Ingredients for Tomato and Goat Cheese Salad Recipe

  • Medium tomatoes 4-5

  • Goat Cheese 50 grams

  • Green olives 6-8

  • Black olives sliced into roundels a few

  • For Dressing

  • Olive oil 4 tablespoons

  • Fresh mint leaves 12-15 + for garnishing

  • Pickled jalapenos 4-5

  • Lemon juice 2 teaspoons

  • Salt to taste

  • Mustard powder 1 teaspoon

Method

Step 1

Slice tomatoes into roundels and arrange them on a serving platter each roundel overlapping the other.

Step 2

Soak goat’s cheese in warm hot for some time so that the saltiness reduces. Crumble goat cheese and sprinkle over tomatoes.

Step 3

For dressing, put olive oil in a blender jar, add mint leaves, jalapenos, lemon juice, salt and mustard powder and blend well.

Step 4

Add green and black olives to the tomatoes in the serving plate, pour the dressing on top, garnish with mint leaves and serve immediately.
