Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Veg Sandwich - SK Khazana Recipe

  • English cucumber 1

  • Tomatoes 2 medium

  • Purple cabbage 1/4 medium

  • Potatoes boiled and peeled 2 medium

  • Brown bread slices 8

  • Butter as required

  • Spicy tomato chutney as required

  • Romaine lettuce leaves a few

  • Chaat masala to sprinkle

  • Cheese slices 4

  • Cherry tomatoes to serve

  • Tomato ketchup to serve

Method

Step 1

Slice cucumber tomato and purple cabbage into thin roundels. Transfer them on a plate. Slice potato and set aside.

Step 2

Apply butter on all the brown bread slices. Spread spicy tomato chutney evenly on all the slices .

Step 3

Tear and place a few romaine lettuce leaves on 4 bread slices, place potato roundels over the lettuce and sprinkle a little chaat masala on them. Top with cucumber slices and tomato slices and sprinkle a little chaat masala over them. Over these place a purple cabbage roundel and a cheese slice.

Step 4

Cover all the sandwiches with the remaining 4 slices.

Step 5

Trim the edges and halve all the sandwiches.

Step 6

Arrange them in a serving plates with romaine lettuce leaves, cherry tomatoes and tomato ketchup and serve immediately.
