Available in various types, shapes and sizes, these edible fungi (purely vegetarian!) are a great way to glam-up your dishes. Talking about the types, there are – button, enoki, morel, oyster, shiitake, porcini, chanterelle and portabella. Buy the ones with a firm texture and even colour with tightly-closed caps. If the gills are showing, it is an indication of age and they are probably past their prime.

Ingredients for Vegetable Manchow Soup - SK Khazana Recipe

  • Button mushrooms roughly chopped 8-10

  • Medium carrot peeled and finely chopped 1

  • Green capsicum finely chopped 1 tablespoon

  • Cabbage finely chopped 1/2 cup

  • Oil 1 tablespoon

  • Ginger finely chopped 1 tablespoon

  • Green chillies finely chopped 2

  • Garlic chopped 1 tablespoon

  • Vegetable stock 2 cups

  • Dark soy sauce 1 1/2 tablespoons

  • Salt to taste

  • Black pepper powder to taste

  • Cornflour 1 tablespoon

  • Red chilli sauce 1 tablespoon

  • Spring onion greens diagonally 1 tablespoon

  • Vinegar 1 1/4 teaspoons

  • Egg 1

  • Fried noodles to garnish


Step 1

Heat oil in a non-stick pan. Add ginger, green chillies and garlic, mix and sauté till fragrant.

Step 2

Add mushrooms, carrots, capsicum and cabbage, mix well and cook for 3-4 minutes.

Step 3

Add vegetable stock, ½ cup water and soy sauce and mix well. Add salt and pepper powder, mix well and bring to a boil.

Step 4

Add some water to the cornflour in a small bowl and mix well and set aside. Add red chilli sauce to the soup and mix well. Add cornflour slurry, mix well and cook till it thickens.

Step 5

Add spring onion greens and 1 teaspoon vinegar and mix well.

Step 6

Break egg in a bowl. Add remaining vinegar, whisk well. Take some of this mixture in a ladle, pour into the piping hot soup and stir once. The egg will get cooked on its own.

Step 7

Pour soup into individual soup bowls, garnish with fried noodles and serve hot.
