Till a few years ago, cauliflower used to be a vegetable that is only available during winter but of late cauliflower is available year around especially in big cities. Referred to as the aristocrat of the cabbage family, the flowers are also eaten raw at times. While buying, look for fresh cauliflowers with compact white heads and green fresh looking leaves. Avoid and reject any loose or spread out heads – they are a sure sign of over maturity.

Ingredients for Veggie Fingers Recipe

  • Cauliflower grated ½ cup

  • Carrots grated ¼ cup

  • Fresh coriander leaves chopped 1 tablespoon

  • Onion finely chopped 1 medium

  • Potatoes boiled, peeled and grated 2 medium

  • Garam masala powder ½ teaspoon

  • Red chilli powder 1 teaspoon

  • Salt to taste

  • Mozzarella cheese grated ¼ cup

  • Fresh bread crumbs as required

  • Refined flour (maida) 2-3 tablespoons

  • Oil for deep-frying

  • Tomato ketchup as required


Step 1

Take cauliflower, carrot, coriander leaves, onion, potatoes, garam masala powder, chilli powder, salt and mozzarella cheese in a bowl and mix well.

Step 2

Divide the mixture into equal portions and shape them into 2 inch thick rolls.

Step 3

Spread some breadcrumbs on a plate and coat each roll with it.

Step 4

Take flour and some water in another bowl and whisk well to make a smooth batter.

Step 5

Spread some breadcrumbs on the worktop. Dip the prepared rolls in the batter and roll them in the breadcrumbs on the worktop. Transfer onto a plate and freeze for 15-20 minutes.

Step 6

Heat sufficient oil in a pan.

Step 7

Deep-fry rolls in hot oil till golden and crisp. Drain on absorbent paper.

Step 8

Put some tomato ketchup in individual shot glasses, place one fried roll in each glass and serve hot.
