Volcanic Black Pepper Sauce

Grilled mushrooms tossed in spicy black pepper sauce. The base is oyster sauce and tomato ketchup. This recipe has featured on the show Khanakhazana.

Ingredients

  • ¼ cup roasted black peppercorns             
  • ¾ cup oil                         
  • 3 medium onions, sliced                   
  • 30 garlic cloves, sliced                     
  • 4 inch ginger pieces, sliced                     
  • ¾ cup oyster sauce                    
  • 1½ cups tomato ketchup                
  • ½ cup + 2 tablespoons vinegar                     
  • 5 teaspoons sugar                         
  • 3 tablespoons dark soy sauce                    
  • 3½ teaspoons salt                         
  • 8 button mushrooms            
  • 1 tablespoon lemon juice                    

Method   

  1. Crush the roasted black peppercorns in a mixer. 
  2. Heat oil in a pan.  Add onions and sauté for a minute.  Add ginger and garlic and sauté for two minutes.
  3. Add peppercorns and continue to sauté for two minutes.  Add oyster sauce and tomato ketchup and mix.
  4. Add vinegar, sugar, dark soy sauce and salt.  Mix and cook till the desired consistency is reached.
  5. String the button mushrooms onto toothpicks and place them on a grill pan.  Sprinkle salt and lemon juice and grill.
  6. Grind the sauce mixture and transfer into a bowl.
  7. Sprinkle some water over the mushrooms, cover and cook till the mushrooms are done.  Put some of the sauce and toss and cook for one minute.
  8. Serve hot.
