Ingredients for Volcanic Lemon Vegetable Rice Recipe

  • Lemon pickle 2 tablespoons

  • Basmati rice

  • Carrots cut into diamonds, blanched 2 small

  • French beans cut diagonally in 1 inch, blanched 1/2 cup

  • Cauliflower florets blanched 1/2 cup

  • Green peas blanched 1/2 cup

  • Cooked basmati rice 3 cups

  • Oil 2 tablespoons

  • Onion chopped 1 large

  • Garlic chopped 10-12 cloves

  • Coconut milk 1/2 cup

  • Fresh red chillies chopped 4

  • Turmeric powder 1/2 teaspoon

  • Salt to taste

  • Vegetable stock cubes crumbled 2

  • White sauce 1 cup


Step 1

Heat the oil in a non stick pan. Add the onion and sauté till light golden. Add the garlic and sauté till golden. Place the rice in individual bowls, drizzle the coconut milk and heat it in the microwave oven.

Step 2

Add the red chillies, lemon pickle and two cups of water to the pan and stir. Add turmeric powder, salt and the stock cubes. Simmer for a minute and transfer into a bowl. Blend with a hand blender.

Step 3

Add the white sauce to the pan and stir in the blended sauce. Mix well, adjust salt and simmer for two minutes.

Step 4

Add carrot, cauliflower, French beans and green peas and mix.

Step 5

Pour the vegetable gravy over the rice and serve immediately.
