Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Achari Paneer Rice - SK Khazana Recipe

  • Cottage cheese (paneer) cut into 1/2 inch cubes 150 grams

  • Rice cooked 3 cups

  • Lemon pickle 1 tablespoon

  • Oil 1 tablespoon

  • Mustard seeds 1/2 teaspoon

  • Black peppercorns 8-10

  • Bay leaves 2

  • Red, Green and red capsicums cut into triangles 1/2 cup

  • Salt to cook

  • Fresh coriander sprig to garnish

Method

Step 1

Put lemon pickle into a blender and blend to a fine paste.

Step 2

Heat oil in a deep non-stick pan, add mustard seeds and let them splutter. Add black peppercorns and bay leaves and sauté till fragrant.

Step 3

Add blended pickle and cook on medium heat till oil separates. Add cottage cheese cubes, red, green and yellow capsicum triangles. Mix and sauté for 1-2 minutes.

Step 4

Add rice and salt and mix well. Cook for 3-4 minutes on medium heat.

Step 5

Transfer into serving dish, garnish with coriander sprig. Serve hot.
