Achari Pulao Pulao made with vegetables, flavoured with pickle This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 07 Jun 2021 in Recipes Course New Update Main Ingredients Basmati rice, Green chilli pickle (mirchi ka achar) Cuisine Indian Course Rice Prep Time 16-20 minutes Cook time 11-15 minutes Serve 4 Taste Spicy Level of Cooking Easy Others Veg Ingredients list for Achari Pulao 3 cups Basmati rice , cooked 3 tablespoons Green chilli pickle (mirchi ka achar) 1 tablespoon Oil 1 teaspoon Mustard seeds 1 Dried red chilli 1 medium Onion , finely chopped 1/2 cup Mixed capsicums (red, yellow & green) triangles 1/2 cup Corn kernels , boiled 1/4 teaspoon Turmeric powder to taste Salt 1/2 tablespoon Lemon juice 2 teaspoons Fresh coriander leaves , chopped for garnishing Fresh coriander sprigs Method Put green chilli pickle into a mixer jar and grind to a smooth paste. Heat oil in a non-stick pan, add mustard seeds and let them splutter. Break red chilli and onion, mix and sauté till onion turns translucent. Add mixed capsicums and corn kernels, mix and saute for 1 minute. Add green chilli pickle paste and turmeric powder, mix and saute for 1 minute. Add rice, toss well and cook for 1-2 minutes. Add salt, toss and cook for 1 minute. Add lemon juice and mix. Add coriander leaves and mix well.
