How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Achari Pulao Recipe

  • Basmati rice , cooked 3 cups

  • Green chilli pickle (mirchi ka achar) 3 tablespoons

  • Oil 1 tablespoon

  • Mustard seeds 1 teaspoon

  • Dried red chilli 1

  • Onion , finely chopped 1 medium

  • Mixed capsicums (red, yellow & green) triangles 1/2 cup

  • Corn kernels , boiled 1/2 cup

  • Turmeric powder 1/4 teaspoon

  • Salt to taste

  • Lemon juice 1/2 tablespoon

  • Fresh coriander leaves , chopped 2 teaspoons

  • Fresh coriander sprigs for garnishing


Step 1

Put green chilli pickle into a mixer jar and grind to a smooth paste.

Step 2

Heat oil in a non-stick pan, add mustard seeds and let them splutter. Break red chilli and onion, mix and sauté till onion turns translucent.

Step 3

Add mixed capsicums and corn kernels, mix and saute for 1 minute. Add green chilli pickle paste and turmeric powder, mix and saute for 1 minute.

Step 4

Add rice, toss well and cook for 1-2 minutes. Add salt, toss and cook for 1 minute. Add lemon juice and mix. Add coriander leaves and mix well.

Step 5

Transfer into a serving bowl, garnish with coriander sprig and serve hot.
