Aloo Bharta

Indian version of the popular continental mashed potatoes – very flavorful and tasty. Bharta is normally made with brinjal. This recipe replaces brinjal with all time favourite potatoes. This is a Sanjeev Kapoor exclusive recipe.

Ingredients

  • 3 medium potatoes, boiled and peeled
  • 1 1/2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1/2 tablespoon chopped garlic 
  • 1 1/2 teaspoons chopped ginger 
  • 1-2 green chillies, chopped
  • 3-4 Spring onions with greens, chopped
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon red chilli powder
  • 1 1/2 teaspoons kitchen king masala
  • 2 tablespoons chopped fresh coriander leaves 
  • Salt to taste
  • 1/2 teaspoon dried mango powder
  • Chopped spring onion greens for garnish

Method

  1. Heat oil in a non-stick pan, add cumin seeds and allow them to change colour.
  2. Add garlic, ginger, green chillies and spring onions, mix well and sauté for 1-2 minutes.
  3. Add turmeric powder, red chilli powder and Kitchen King Masala, mix well and sauté for 1-2 minutes.
  4. Grate the potatoes and add to the pan. Add ½ cup water and mix well. Cook for 1 minute.
  5. Add coriander leaves, salt and dried mango powder, mix well and cook for 1 minute. Take it off the heat.
  6. Transfer into a serving bowl, garnish with spring onion greens and serve hot.
