Ingredients
- 3 medium potatoes, peeled and cut into medium cubes
 - 200 grams cauliflower florets
 - 1 1/2 tablespoons oil
 - 1 teaspoon cumin seeds
 - 3-4 green chillies, slit
 - 3 tablespoons chopped onions
 - 3 tablespoons chopped tomato
 - Salt to taste
 - 1/4 teaspoon turmeric powder
 - 1 teaspoon red chilli powder
 - 1 teaspoon garam masala powder
 - 1 1/2 teaspoons coriander powder
 - 1 inch ginger, cut into thin strips
 - 1 tablespoon chopped fresh coriander leaves
 - Coriander leaves for garnish
 
Method
- Heat oil in a non-stick pan, add cumin seeds and when their colour changes, add green chillies, mix and saute for 1 minute. Add onion, mix and saute for 2-3 minutes.
 - Add tomatoes, mix and saute for 1 minute. Add salt, mix well, cover and cook till tomatoes soften.
 - Add turmeric powder, red chilli powder, garam masala powder and coriander powder and mix well. Cover and cook for 2-3 minutes.
 - Add potatoes, cauliflower florets, salt and ½ cup water and mix well. Cover and cook for 8-10 minutes or till the vegetables are done.
 - Remove the lid, sprinkle ginger strips and coriander leaves and mix well.
 - Transfer into a serving bowl, garnish with coriander leaves and serve hot with phulkas.
