Ingredients list for Apricot Chicken on Skewers

  • 1 Boneless chicken leg, cut into 1 inch pieces
  • 4 tablespoons Apricot jam
  • 18-20 Golden apricots dried
  • to taste Salt
  • 1 teaspoon Crushed black peppercorns
  • 2 tablespoons Oil
  • 2 medium Onions chopped
  • 1/2 teaspoon Coriander powder
  • 1/2 teaspoon Cumin powder
  • 1 1/2 teaspoons Curry powder
  • 1 tablespoon brown sugar/jaggery
  • 2 teaspoons Lemon juice
  • 1 Bay leaf
  • 1 medium Onion cut into cubes and layers separated
  • 1 medium Green capsicum diced

Method

  1. Place chicken pieces in a bowl. Add salt and crushed peppercorns, mix and set aside.
  2. Heat one tablespoon oil in a non-stickpan,add onions and sauté till golden.
  3. Add coriander powder, cumin powder and curry powder, mix well and sauté for a minute.
  4. Add brown sugar, lemon juice, apricot jam, one-fourth cup of water and bay leaf, mix well and cook on high heat till it reaches a sauce consistency. Discard the bay leaf and set aside to cool.
  5. Pour the sauce over the marinated chicken and mix well. Marinate for four to five hours.
  6. Insert onto the skewers an onion layer, capsicum cube, dried apricot and marinated chicken piece. Repeat the process with the remaining chicken pieces.
  7. Heat remaining oil in a non-stick grill pan. Place the skewers on it, grill rotating since they are well cooked from all the sides and cook till the chicken is fully done.
  8. Serve hot.
