Atta Pizza

Ingredients 

Dough

  • 1½ whole wheat flour (atta) cups + for dusting
  • 20 grams fresh yeast
  • 1 teaspoon sugar
  • 1 teaspoon olive oil + for greasing
  • 1 teaspoon salt

Method

  1. To make pizza dough, put yeast in a bowl, add sugar and ¼ cup warm water, mix well and set aside for 10 minutes to activate.
  2. Take whole wheat flour in a large bowl, add activated yeast, olive oil, salt and sufficient water, mix well and knead to a soft dough.
  3. Cover the dough with a damp muslin cloth and set aside for 10-15 minutes to prove.
  4. Dust flour on a worktop and knock back the proved dough. Take a portion of the dough, shape it like a ball, place it on the worktop and flatten it slightly. Roll the dough into a disc and place it on a greased baking tray. Cover with a damp muslin cloth and set aside for 10 minutes to prove.
  5. Preheat the oven to 180° C.
  6. Apply pizza sauce and spread it evenly. Sprinkle a few mixed capsicum triangles, a few mushroom slices, a few chicken sausage slices, 1 tbsp sweetcorn kernels, a few black olive slices and a few mozzarella cheese cubes and place the tray in the oven. Bake for 10-15 minutes. Take it out of the oven and transfer it to a serving dish.
  7. Sprinkle dried red chilli flakes and dried oregano over the pizza and serve hot.
