This recipe is from FoodFood TV channel By Sanjeev Kapoor 04 Aug 2016 in Recipes Course New Update " frameborder="0" allowfullscreen> Main Ingredients Eggs, Chicken mince Cuisine Indian Course Snacks and Starters Prep Time 0-5 minutes Cook time 41-50 minutes Serve 4 Taste Spicy Level of Cooking Moderate Others Non Veg Ingredients list for Baida Roti 9 Eggs 1 cup Chicken mince to taste Salt 1 tablespoon Oil 1/8 teaspoon Baking powder Oil 1 tablespoon + for cooking 1 medium Onion finely chopped 1 tablespoon Ginger-garlic paste 1 cup Refined flour (maida) 2 small Tomatoes finely chopped 2 Green chillies finely chopped a pinch Turmeric powder 1 1/2 teaspoons Red chilli powder 1/2 teaspoon Garam masala powder for garnishing A fresh coriander sprig Method Mix together refined flour, salt, oil, baking powder and 1 egg in a bowl. Add ¼ cup water and knead into a soft dough. Divide the dough into 4 equal portions and roll out into 8 inch square rotis. Heat 1 tbsp oil in a non-stick pan. Add onion and sauté for 1 minute. Break remaining eggs into a bowl and beat well. Add ginger-garlic paste to the pan, mix and sauté for ½ minute. Add chicken mince, mix and cook for 2 minutes. Add tomatoes, green chillies, turmeric powder, red chilli powder and salt and mix well. Add ¾ cup water and mix well. Add garam masala powder, mix well, cover and cook on medium heat till chicken mince is cooked and mixture is dry. Heat a non-stick tawa. Place each roti on it and cook for 2 minutes on each side. Drizzle some oil on the sides and cook. Pour some beaten egg on top and spread, cook for 1 minute. Flip and cook till the egg is cooked. Place a portion of cooked chicken mince mixture in the centre, fold in the sides to make a square packet. Press and pour some more beaten egg on top. Flip, drizzle some more oil on the sides and cook, turning sides, till both sides turn golden and crisp. Cut into squares and serve hot garnished with coriander sprig.
