By Sanjeev Kapoor 10 Jun 2016 in Recipes Course New Update Main Ingredients Barley, Sweet Corn Cuisine Fusion Course Salads Prep Time 8-10 hour Cook time 0-5 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients list for Barley Corn Salad 1 cup Barley soaked for 8 hours and cooked in salty water ½ cup Sweet Corn boiled 1 medium Cucumber peeled and diced 1 medium Tomato diced to taste Black pepper powder to taste Salt 1 stalk Celery finely chopped 2 tablespoons Fresh coriander leaves chopped 1 tablespoon Lemon juice 2-3 tablespoons Olive oil 1 small Iceberg lettuce head Method Combine barley and sweet corn in a bowl and mix well. Add cucumber and tomato and mix. Add pepper powder, salt and celery and mix well. Add chopped coriander and lemon juice and mix again. Add olive oil and mix well. Roughly tear lettuce and add, mix well and refrigerate to chill.
