Ingredients
- 1 cup barley, soaked for 8 hours and cooked in salty water
- ½ cup boiled sweet corn
- 1 medium cucumber, peeled and diced
- 1 medium tomato, diced
- Black pepper powder to taste
- Salt to taste
- 1 celery stalk, finely chopped
- 2 tablespoons chopped fresh coriander leaves
- 1 tablespoon lemon juice
- 2-3 tablespoons olive oil
- 1 small iceberg lettuce head
Method
- Combine barley and sweet corn in a bowl and mix well. Add cucumber and tomato and mix.
- Add pepper powder, salt and celery and mix well. Add chopped coriander and lemon juice and mix again. Add olive oil and mix well.
- Roughly tear lettuce and add, mix well and refrigerate to chill.
- Serve chilled.
