Ingredients list for Beans Ragout with Grilled Sausages

  • 2 cups Black eyed beans soaked and cooked
  • 4 Sausages Italian
  • 1½ tablespoons Extra-virgin olive oil
  • 4 Cloves chopped
  • 2 medium Onions chopped
  • 1 Red bell pepper chopped
  • 2 tablespoons Tomato puree
  • 1½ cups Vegetable stock
  • 2 tablespoons Parmesan cheese grated
  • to taste Salt
  • to taste Crushed black peppercorns
  • a few Cherry tomatoes halved
  • for garnishing Fresh parsley

Method

  1. Heat one tablespoon olive oil in non-stick pan. Add the garlic and sauté for a minute.
  2. Add the onions and pepper, mix and sauté till the onions turn translucent.
  3. Add the tomato puree, mix and sauté for two to three minutes.
  4. Add the beans and stock, mix well and cook on medium heat till the mixture slightly thickens.
  5. Add the parmesan cheese, salt and crushed peppercorns and mix well.
  6. Heat remaining olive oil in a non-stick grill pan. Place the sausages and grill till evenly done.
  7. Divide the beans ragout onto individual serving plates and place a grilled sausage on top.
  8. Garnish with cherry tomatoes and parsley sprigs. Serve hot.
