Bhindi Curry

Ingredients 

  • 200 grams ladyfingers (bhindi), cut
  • 500 grams yogurt
  • 1/4 teaspoon mustard seeds
  • 8 curry leaves
  • 1/2 cumin seeds
  • 1/2 teaspoon ginger paste
  • 1 teaspoon garlic paste
  • 3 teaspoons mustard oil
  • 1/4 cup gram flour (besan)
  • A big pinch of turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon green chilli paste
  • Salt to taste
  • 1 teaspoon chopped Fresh coriander leaves 

Method

  1. Heat oil in a non stick pan, add mustard seeds and curry leaves.Allow it to splutter. Add cumin seeds, ginger and garlic paste. Saute for two minutes. Add lady fingers and sauté for five minutes. Cover and cook till soft.
  2. In a bowl whisk yogurt, add gram flour and three cups water. Whisk till smooth. Add the liquid to the lady fingers, add turmeric powder, coriander powder, green chilli paste and salt. Mix well. Allow the mixture to boil and thicken.
  3. Garnish with chopped coriander leaves and serve hot.
