Ingredients list for Biryani Kulcha

  • 2 cups Readymade veg biryani
  • as required Readymade kulcha dough
  • 1 teaspoon Garam masala powder
  • 1/2 teaspoon Green cardamom powder
  • 2 Green chillies , finely chopped
  • 1/2 inch Ginger , chopped
  • 3 tablespoons Browned onion
  • 2 Fresh mint sprigs
  • 1 Lemon
  • 1 teaspoon Red chilli powder
  • 3-4 tablespoons Butter , softened
  • to sprinkle Refined flour
  • as required Ghee
  • to serve Garlic raita

Method

  1. Preheat oven to 180°C.
  2. Take biryani in a bowl, add garam masala powder, green cardamom powder, green chillies, ginger, browned onions and mint leaves. Squeeze the juice of a lemon into the bowl and mix well. Add red chilli powder and butter and mix well.
  3. Divide kulcha dough into equal medium sized portions. Sprinkle flour on worktop, and roll each portion into medium thick discs.
  4. Place some biryani mixture in the centre of each disc, gather the edges together and press to seal. Flatten slightly with palms and spread into a medium disc.
  5. Transfer the kulchas on a baking tray and brush some ghee on top. Keep the tray in the preheated oven and bake for 7-8 minutes.
  6. Halve the kulchas and arrange on a serving plate. Serve hot with garlic raita.
