You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Boiled Egg Bhurjee Recipe

  • Eggs , boiled 2

  • Eggs 2

  • Oil 2 tablespoons

  • Ginger , finely chopped 1 tablespoon

  • Green chillies , finely chopped 2

  • Onion , finely chopped 1 medium

  • Tomatoes , finely chopped 2 small

  • Salt to taste

  • Coriander powder 1 teaspoon

  • Red chilli powder 1 tsp + to sprinkle

  • Turmeric powder 1/4 teaspoon

  • Garam masala powder 1/2 tsp + to sprinkle

  • Butter 2 tablespoons

  • Red chilli sauce 1 tbsp + for drizzling

  • Fresh coriander leaves , chopped 1 tablespoon

  • Green chutney 2 tablespoons

  • Processed cheese , grated 1/4 cup

  • Pavs to serve

  • Fresh mint leaves to garnish


Step 1

Heat 1 tbsp oil in a non-stick pan, add ginger and green chillies and sauté till fragrant.

Step 2

Add onions, mix and sauté till translucent. Add tomatoes and mix. Add salt, mix and cook till the tomatoes turn soft and pulpy.

Step 3

Finely chop boiled eggs.

Step 4

Add coriander powder, red chilli powder, turmeric powder, garam masala powder and 1 tbsp butter to the pan and mix well.

Step 5

Add chopped eggs and mix well. Add red chilli sauce and mix. Add coriander leaves and mix well. Transfer into a bowl.

Step 6

Heat remaining oil in the same pan. Break eggs in it and cook a sunny side up. Transfer the sunny side on top of the prepared bhurji.

Step 7

Mix green chutney, remaining butter and cheese well and put on top of the sunny side egg.

Step 8

Toast pavs till lightly browned on both sides.

Step 9

Sprinkle red chilli powder, garam masala powder and mint leaves on bhurji, drizzle red chilli sauce on top and serve hot with toasted pavs.
