Ingredients

  • 4 buns
  • 4 small onions
  • 8 eggs
  • Salt to taste
  • 2 teaspoons crushed red chillies
  • 2 teaspoons black pepper powder
  • Few sprigs of fresh thyme
  • 12 tablespoons oil
  • 2 medium tomatoes 
  • 4 cheese slices

Method

  1. For each portion, roughly chop 1 onion and put into a chopper. Add 2 eggs, salt, ½ teaspoon crushed red chillies, ½ teaspoon black pepper powder, a little fresh thyme and process.
  2. Heat 2 tablespoons oil in a non-stick pan and place a round ring in it. Pour the egg mixture into the ring and let it cook.
  3. Halve 1 bun. Heat 1 tablespoon oil in another non-stick pan and place the bun, cut side facing down, in the pan and cook till golden.
  4. Cut tomatoes into round slices. 
  5. Place the base half of the bun in a serving plate, place some tomato slices on it. 
  6. Gently remove the ring from the first pan and flip the omelette.  Cook the other side similarly.
  7. Once the omelette is done, place it over the tomato slices. Place a cheese slice over it and cover with the upper half of the bun. Serve immediately.
