Ingredients

  • 2 chicken breasts, cut into thin strips 
  • 1 tablespoon oil + for deep-frying 
  • Salt to taste 
  • Crushed black peppercorns to taste
  • 3-4 tablespoons cornstarch
  • 1 egg
  • 1 tablespoon chopped garlic 
  • 1 inch celery, finely chopped 
  • 2-3 spring onion bulbs, sliced
  • 1 cup mixed capsicum strips (green, red and yellow)
  • 1 tablespoon red chilli sauce 
  • 1 teaspoon soy sauce 
  • 2 tablespoons diagonally sliced spring onion greens + for garnishing 

Method

  1. Heat sufficient oil in a kadai. 
  2. Put chicken strips on a plate. Add salt, crushed peppercorns, egg and cornstarch and mix well. 
  3. Put chicken strips in hot oil and deep-fry till golden brown and crisp. Drain on absorbent paper. 
  4. Heat oil in a non-stick pan. Add garlic and celery and sauté till garlic turns golden brown. Add spring onion bulbs, mixed capsicum strips, red chilli sauce and soy sauce and sauté for 1 minute.
  5. Add salt, crushed peppercorns and fried chicken strips, mix and cook for 1-2 minutes. Add spring onion greens and mix well. 
  6. Serve hot.
