Chicken Meat Loaf Flavourful chicken mince cooked in a loaf tin and served with a mushroom sauce. This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 08 Nov 2016 in Recipes Course New Update Main Ingredients Chicken mince, Button mushrooms Cuisine British Course Main Course Chicken Prep Time 11-15 minutes Cook time 1-1.30 hour Serve 4 Taste Mild Level of Cooking Easy Others Non Veg Ingredients list for Chicken Meat Loaf 250 grams Chicken mince 8-10 Button mushrooms sliced 1 slice Brown bread + for greasing Oil 1 tablespoon ½ cup Milk 1 medium Onion finely chopped 1 tablespoon Garlic chopped 1 small Carrot finely chopped ½ medium Green capsicum finely chopped 1 teaspoon Dried oregano to taste Crushed black peppercorns 1 tablespoon Worcestershire sauce 1 tablespoon Tomato ketchup to taste Salt 1 Egg white Sauce: 1 tablespoon Butter ½ medium Onion finely chopped to taste Crushed black peppercorns to taste Salt 1 cup Chicken stock 1 tablespoon Cornflour/ corn starch Method Preheat oven to 180ºC. Grease a loaf tin with some oil. Take chicken mince in a bowl. Soak bread slice in some milk for 5 minutes. Heat oil in a non-stick pan, add onion and saute till golden. Add garlic and saute on low heat for 30 seconds. Add carrot, mix and cook for a minute. Add capsicum, mix and cook for a minute. Remove from heat. Squeeze out milk from the bread and add it to the chicken and mix well. Add dried oregano, crushed peppercorns, Worcestershire sauce, tomato ketchup and salt and mix well. Add egg white and mix again. Add sauteed vegetables to chicken and mix well. Put the prepared chicken mixture into the greased loaf tin and level it out. Cover the loaf tin with aluminum foil. Place the loaf tin on a baking tray, place the tray in the preheated oven and bake for 30-40 minutes. Remove from heat and cool. To prepare sauce, heat butter in a non-stick pan. Add onion and sauté till golden. Add button mushrooms and sauté for 1-2 minutes. Add crushed peppercorns and salt and mix well. Add chicken stock, mix and cook on low heat for 5-6 minutes. Mix cornstarch in some water to make a smooth slurry, add to the pan, mix and cook till the sauce thickens. Demould the meat loaf and place it on a serving plate. Slice. Pour the prepared sauce in a jar and drizzle the sauce over the meat loaf.Serve immediately.
