Chicken Peach Salad

Ingredients 

  • 2 grilled chicken breasts
  • 2-3 peaches , halved, seeded and cut into wedges
  • 1/2 cup green gram , sprouted
  • 1//2 cup moth , sprouted
  • 10-12 baby spinach leaves
  • 1 medium white onion , sliced

Dressing

  • 2-3 teaspoons dijon mustard paste
  • 1 teaspoon chopped fresh mixed herbs 
  • Salt to taste
  • 1 teaspoon red chilli flakes
  • Black pepper powder to taste
  • 1 tablespoon vinegar
  • 2-3 tablespoons olive oil

Method

  1. Put grilled chicken breasts in a bowl and shred. Add peaches, sprouted green gram, sprouted moth, baby spinach leaves and onion.
  2. To prepare dressing, take Dijon mustard paste in a jar, add fresh mixed herbs, salt, chilli flakes, pepper powder, vinegar and olive oil and blend with an electric hand blender into a smooth mixture.
  3. Add the dressing to the salad mixture and mix well.
  4. Transfer the salad into a serving platter and serve immediately.
