Ingredients
- ½ cup boiled and shredded chicken
 - 1 cup quinoa, boiled
 - 4-5 fresh parsley sprigs
 - 1 spring onion with greens, finely chopped
 - 1 medium tomato, finely chopped
 - 1 teaspoon dark soy sauce
 - 1 teaspoon lemon juice
 - 1 tablespoon olive oil
 - Salt to taste
 
Method
- Chop parsley
 - Mix quinoa, chopped parsley, tomato, spring onion, chicken and salt in a bowl.
 - For dressing, mix soy sauce, olive oil, lemon juice and salt in second bowl.
 - Add the dressing to the salad and mix well.
 - Serve immediately.
