Chilli Idli

Leftover steamed idlis can be turned into a delicious dish cooked in the Indo -Chinese style with assorted capsicums. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 10-15 idlis, quartered
  • 2-3 green chillies, finely chopped
  • 2 tablespoons cornflour
  • 1/2 tablespoon oil +to deep fry 
  • 1 tablespoon chopped garlic 
  • 1/2 tablespoon chopped ginger 
  • 1 small onion, quartered and layers separated
  • 1 small red capsicum, cut into squares
  • 1 small yellow capsicum, cut into squares
  • 1 tablespoon soy sauce
  • 1 tablespoon red chilli sauce
  • 3/4 cup vegetable stock
  • Salt to taste
  • Crushed black peppercorns to taste
  • 1 tablespoon cornflour slurry
  • Spring onion greens diagonally sliced for garnish

Method

  1. Heat sufficient oil in kadai.
  2. Take idli pieces in a bowl, add cornflour and mix well. Deep-fry the idli pieces till lightly brown. Drain on absorbent paper.
  3. Heat 1 tablespoon oil in a non-stick pan. Add garlic, ginger and green chillies and sauté till fragrant.
  4. Add onions, red and yellow capsicums, mix and cook for 2-3 minutes.
  5. Add soy sauce and chilli sauce and mix well. Add stock, mix and bring to a boil.
  6. Add salt and crushed peppercorns and mix well. Add cornflour slurry and mix well. Add fried idli pieces, mix well and cook for a minute.
  7. Garnish with spring onion greens and serve hot.
